My name is Ursula Dwyer and cakes and cake decorating are in my
blood. My family association with baking can be traced back through generations. My Mum is a wonderful
cook and always made sure the cupboards of our childhood home were full of homemade cakes - she inherited the gift from her
mother who in turn inherited from her father - my great grandfather, Herbert Rusbridge. He was a chef who worked
at various London Clubs and Hotels and looking at his handwritten recipe books is an education in itself - the ingredient
list for the Christmas cakes he baked in 1921 includes: 84lbs Suet, 56lbs Flour, 35 Oranges, 280 Eggs and 4 Gallons of Beer.
